Soy-Free Grilled Chicken Recipe

Summer is near, and that means it’s time to fire up the grill! Grilling is a great way to create healthy dishes for your friends and family. Bring the people you love together this summer over a delicious Soy-Free Chicken recipe that can be prepared on the grill.

– 1/2 cup Coconut Aminos

– 1/2 cup water

– 1/2 teaspoon Sriracha hot sauce

– 5 quarter inch slices of ginger root

– 1 lime

– 2 pinches of fine grain sea salt

– 3 lbs of boneless and skinless chicken thighs

Cut the lime in half and juice one half into a large dish along with the rind. Then add in the rest of the marinade ingredients as well as the chicken thighs. Place the dish in the refrigerator for an hour, making sure that the pieces are evenly covered so that they will retain the most flavor. After an hour you can remove the chicken from the marinade and grill it until it is fully cooked.

While the chicken is on the grill, take the marinade and place it into a small saucepan, along with two teaspoons of corn starch. Put stove on medium-high heat and bring the marinade to a boil for 5 full minutes. It is important that you stir the marinade frequently and also that your boiling time lasts at least five minutes as that will kill any harmful bacteria that came from the raw chicken. Reduce the heat to a simmer until you are ready to serve your meal.

This is an excellent dish to serve with rice. The marinade also goes well with other protein sources including sirloin. Leave a comment and let us know how yours came out as well as any modifications you made. Come back soon and  check for more healthy summer treats from the grill!
